YUM – PIZZA!!!

So delish. So easy. So fun.

Homemade Pizza may be one of my favorite foods!  I love being able to adjust a simple recipe into any direction you want to go.  You can have the normal pizza sauce with pepperoni or sausage, but if you know me at all, I typically don’t do normal.  An adventure is always around the corner for me!

Today we have Homemade Tomato Basil Pizza and Chicken BBQ Pizza!  YUM!!

First Step:

Preheat that oven to 425 degrees. Then make the pizza dough.  Normally I suggest to pull out that old recipe that has been handed down from Great Grandma but today, I’ll let you in on a wonderful found secret…
Pillsbury has made this Hot Roll Mix!  Let me just say it is magnificent!

May be the closest thing I have found to a homemade recipe! You can make so much with it too.  Adjust the recipe a bit and you’ll have Cinnamon Rolls or Dinner Rolls, but today we’ll just stick with Pizza Dough.  Whip this up, knead the dough and let it sit to rise for a bit!

Figure out what kind of pizza you want to make, or better yet, you want to eat, and begin to prepare the ingredients while the dough is rising.

I chose a Tomato Basil Pizza and a Chicken BBQ Pizza

Trick to cutting round vegetables.  Cut it in half and then place cut side down.  Now you have a flat surface to balance your vegetable on and it won’t roll and slip away from you!

Ingredients for the Tomato Basil Pizza

Roman Tomatoes
Red Onion
Basil (usually I prefer fresh but in January it’s hard to find, so dried basil will do)
Spinach
Fresh Mozzarella
Shredded Mozzarella
Olive Oil, Basil, Garlic Powder – for the Sauce

Directions

When the dough is ready divide it in half.

Spread it out evenly on a Pizza Pan.  Drizzle some Olive Oil on the dough, sprinkle some basil and garlic powder. Once all the Ingredients are chopped, first lay down a thin layer of Shredded Mozzarella (to help the toppings stick to the dough),

then start layering each ingredient! Finally top with a sprinkle of basil and garlic powder, remaining Mozzarella Cheese and drizzle some olive oil to finish!

Ingredients for the Chicken BBQ Pizza

BBQ Sauce
Red Peppers
Fresh Cilantro
Chicken (already cooked)
Shredded Chedder/Mozzarella Cheese
Red Onion

Directions

Take the other half of the dough and spread it out evenly on a Pizza Pan.

Drizzle some BBQ Sauce on the dough and spread out.

Once all the Ingredients are chopped, first lay down a thin layer of Shredded Cheddar/Mozzarella Cheese (to help the toppings stick to the dough), then start layering each ingredient!

Finally, top with the remaining Cheddar/Mozzarella Cheese.

Place in the oven for 15 minutes.   Keep a close eye on it to make sure it doesn’t burn!

Once the Pizza’s are done.  Pull them out and enjoy!
